Chocolate Banana Cake

Chocolate Banana Cake

[As tasted at Beyond Bruises playgroup :-)]

Ingredients

115g butter (soft/at room temp)

175g flour

1 tsp sodium bicarbonate (called "Natron" and comes in little green packets at the Coop in the baking section)

1 tsp cinnamon

175g light brown sugar (available in larger coop stores - look for an orange box)

2 ripe bananas mashed (it's good if they are a bit over-ripe / spotty)

2 eggs, beaten

5 tbsps hot water

175g chocolate chips

 

Method

This is quite a robust recipe for making with kids i.e. if they mix everything to death then it will still turn out just fine. Mashing bananas is also a good child-activity - give them a big bowl and a fork and let them loose to mush those 'nanas!

  1. Grease & line a loaf tin and set the oven for 160 deg C.
  2. Cream together the butter and sugar until they are soft and fluffy. Add in the mashed up bananas and then the eggs.
  3. In another bowl sift together the flour, cinnamon and sodium bicarb.
  4. Then add some of the flour mixture to the butter/sugar mixture, then a tbsp of hot water, then some more flour mixture, then a tbsp hot water etc. until you get to 5 tbsps of hot water and all the flour is in.
  5. Mix in the choc chips. For a super-chocolatey taste add an extra tbsp or two of cocoa powder if you have some (optional).
  6. Pour / spoon into the loaf tin and bake in the preheated oven for 1 hour 10 mins.

This cake is delicious just on it's own but it's also lovely warm with some ice cream or whipped cream as a pudding.
