Easter biscuits
These are good to make with kids - all the mixing, rolling and cutting out shapes is very child-friendly!
Ingredients
330g flour
175g butter (softened)
175g sugar
1 egg
2 tbsp milk
170g currants or raisins
1 tsp Cinnamon
Method
- Cream together the butter and sugar in a bowl and then add the egg, milk and currants.
- Then mix in the flour and Cinnamon and bring it all together into a workable dough.
- Roll the dough out onto a floured work surface to about 1/2 cm thick. Use a round 5cm cookie cutter (you can also use any Easter/spring shape cutters you might have - rabbits, flowers etc).
- Put the biscuits on a greased baking sheet and bake for about 10 minutes at 180 deg C.
- After that take them out and brush them with egg white and sprinkle on some sugar, then pop them back in the oven for another 5 minutes (or just leave them in for the whole 15 minutes if you can't be bothered with the glazing part!)
