Easter biscuits

Easter biscuits

These are good to make with kids - all the mixing, rolling and cutting out shapes is very child-friendly!

 

Ingredients

330g flour

175g butter (softened)

175g sugar

1 egg

2 tbsp milk

170g currants or raisins

1 tsp Cinnamon

 

Method

  1. Cream together the butter and sugar in a bowl and then add the egg, milk and currants.
  2. Then mix in the flour and Cinnamon and bring it all together into a workable dough.
  3. Roll the dough out onto a floured work surface to about 1/2 cm thick. Use a round 5cm cookie cutter (you can also use any Easter/spring shape cutters you might have - rabbits, flowers etc).
  4. Put the biscuits on a greased baking sheet and bake for about 10 minutes at 180 deg C.
  5. After that take them out and brush them with egg white and sprinkle on some sugar, then pop them back in the oven for another 5 minutes (or just leave them in for the whole 15 minutes if you can't be bothered with the glazing part!)
